I watched someone do this at a private party in Tokyo late last year on a similarly-sized tuna. It was amazing how cleanly everything was cut, using swords that would get you arrested on any street on the planet. There was no meat left on the bones at the cuts, no waste at all.

I rather leave the cutting for the profesionals. I'm more interested in having some sashimi... yum yum. I miss them sooooo much.
