I hope all his enemies stand still for a while, while he takes practice swings, takes time to gauge his distance, and chooses what angle to cut from, and by "cut" I mean slap a bottle out of a plastic bag.

Well, I did attend a demo recently (last few months) where there was an Iaido demo.
The demo was fine, my problem was with the tamashigiri after.

No draw and cut, sword was drawn well back from the target, then walk up to the target.

I cannot be absolutely sure but it sure looked to me like no one cut with the monouchi.
Pretty much every cut was with the center section of the blade, standing way too close.

Not too much testing of iai form, in that "test cutting".

I didn't see your tameshigiri demo, but having had cut both from the draw, as well as drawing the sword and moving to the target and then cutting, I can tell you that performing a nukiuchi type cut (i.e. from the draw) is a lot more difficult and technical than just cutting the target with the sword already drawn. It is definitely a more advanced technique to cut from the draw, and certain cuts, such as a nukiuchi yokoichimonji (one handed cut from the draw horizontally) are very difficult to perform successfully, let alone consistently.
Also, you have to stand a little closer than you might think in order to cut the target correctly. Again, I didn't see the demo you describe, so they may have been standing way too close, but standing too far away, i.e. when the kissaki just lines up with the far side of the target, could cause you problems in executing a successful cut (you might end up leaning forward to compensate instead of maintaining good posture for example) . You would need to be closer than that, which might look too close when lining up, but being that close would actually be more correct in many cases.
Anyway, didn't see the demo, just my 2c, but having performed tameshigiri in an iai format, it is definitely more difficult than I first thought. Tameshigiri provides great feedback on your technique when you do it though! Hope you get a chance to do it in the future, it can be a blast (although the cost of tatami these days makes it the iai version of crack addiction)
