difference in MEN measurments

I was just wondering if someone could please tell me the difference between the mm measurements on men, eg some are '2.5-3', some are '5-6', etc. Also, why are the lowere measurements more expensive?

I think that has to do with the stitching. 2mm would be tighter than 4mm? (help me out here guys) In general, smaller stitching implies greater quality.
