Hello
I am a New Zealander teaching english in Seoul, I practiced Kendo in New Zealand for a very short time before coming over here but would really love to learn here.
I am unsure even where to begin as i speak little/no Korean. If there are any other people who were/are in the same position could they drop me an email.....
address is rob_challies@hotmail.com (think it shows up somewhere in my profile anyways)
that'd be great

Try the Korea Kumdo Association's website - www.kumdo.org.
They have a searchable database that allows you to find dojos by very specific criteria(name of sensei, area). It'll list the dojos' names, adresses, phone numbers and webpages(if they have'em).
I think the biggest problem for you would be in finding an instructor with some degree of proficiency in English. Why not call them over the phone? See if they can answer your questions. Another option would be to try Sungmookwan, the dojo where my brother trains. Apparently the owner has a sister dojo in the U.S. - he should have some working English skills. Not sure about the last one, though.
Hope this helps. Happy training!
