my city's council is going to start enforcing a new law in 3 months requiring any vendors of raw fish to store their fish FROZEN!

This sucks bigtime because it's tough to find good sushi for cheap in toronto.

It's true for most meats... ever noticed the difference in a frozen steak compared to a fresh one? big difference.

I've never eaten a raw steak before so I'm sure the amount of mouisture present on it after it is thawed isn't an issue. As for sushi, tough break kid, there's always shrimp.

How can they even compare eating river fish, with freshly prepared sushi? Eight years ago for that matter.
Drinking a gallon of vinegar would probably kill you, but they don't take that off the market.

I've never eaten a raw steak before....
me neither, i meant cooked steak that had been frozen. It's a lot more tough/flavourless.

not if cooked right. And I put plenty of spices and barbecue sauce on my meats before I eat them. Flavorlessness is not a concern for me.

Most restaurants don't have "One gallon of vinegar" on their menu. It doesn't sell that well.

Raw steak is nice. Raw horse too. Damn shame about the fish sushi. Fresh is best and essential. You cook it before it gets old. Then again a lot fish eaten in Japan is caught outside Japanese waters and is quick frozen.

I am not a super big fan of raw fish. I prefer tempura cooked seafood, i.e. shrimp on a stick. Nothing raw. I've been food poisoned before.

80% of all cases of "the flu" are food poisoning in reality
i've been food poisoned a few times... the worst was from the mandarin chinese buffet once... man i sprayed the bowl from both ends. it put me off the mandarin for like 3 years
you don't need to worry about sushi poisoning you.
ps: tempura is awesome! I think i'd eat anything if it was tempura.

I worked in a sushi factory for two years and I can assure you that our fish was all frozen before we used it. We were in mass production and freezing our stock was the only way we could operate efficiently.
Freezing the fish never seemed to have too much of an effect on the colour. The texture might be another matter but I'm not that fussy. Tuna discolours terribly but that is because it is high in iron and this oxidises (or so I'm told). It will discolour whether it has been frozen or not.
I was told that you should always eat wasabi when eating raw fish because it can prevent you from becomming ill. I was never told whether this was to kill parasites.
If you eat a big piece of raw squid you will notice that it usually has a criss cross pattern sliced into it. I was told that these incision are to kill parasites.
The laws you have described sound terribly clumsy for small sushi bars. Where you would normally buy fish fresh from the marked in the morning and use it the same day you will now have to freeze it and probably wont be able to use it until the next day.

My guess is what they've done is cracked down on regulations for some arbitrary grouping of "asian foods" to prevent something like that sars scare in T.O. last year.
But that would be incredibly ignorant for them to do because sushi is such a relatively safe food to eat.
It's all publicity. Toronto lost a lot because of the sars thing... we even had this big sars relief concert with rolling stones, ACDC, justin timberlake and all to "rock against sars".
however more people died from subway train-related deaths that year.
more people died of the west-nile virus that year too.
what about the other diseases that killed just as many if not more that year

I live in toronto and went downtown during the sars scare and the only effects it had on me was that i got a laugh at all the germophobes wearing paper masks. and it pissed me off that sepultura cancelled their show because they were afraid of infection.... but it's their fault for believing the hyped up crap that the media feeds them. I really wanted to see them play :(

it's crazy! what i've heard is
chefs need a licence to be allowed to sell it.
they must prepare AND eat a meal of puffer fish.
the intestines and liver and stuff contain a neurotoxin and approx 150 chefs taking the exam get poisoned, and roughly 40% of them die from poisoning.

I really wanted to see them play :(but for people in asian countries (unlike toronto) there were many deaths, even among those who wore the masks, and a lot more than china originally reported. I hate when people get uptight when people try to take precautions. This isn't 1954 and you can't just soak your mits in raw chicken juice and eatlike it's all good. It's called the future, welcome.

Indigo, I can never tell who you're "blaming" here.
I was making an assumption that the officials are treating sushi like some generalized unsanitary asian food BECAUSE of the sars impact on Toronto. Under the thinking that they don't want a repeat.
I then went on to explain that sars was over-hyped in Toronto, and that west nile was more of a danger. So i'm not comparing sushi to west nile, it was merely a chain of thought. The subway remark was merely made to illustrate how insignificant sars actually turned out to be in Toronto when compared to the higher (and therefore more deserving attention/relief than sars) numbers of deaths for other things in Toronto.
I was not speaking globally about sars.
But I think you're right, to compare the dangers of sushi to west nile WOULD be silly. But I'm not even sure why they're doing this to my beloved sushi!

Really? Hmmm....we (kinda) got a similar law here in the O-re-gone territory that just went into effect a couple of days ago. It says that all fresh or frozen fish must have labels on em, 1 of three; organic, wild, farmed. Or something like that. Actually, never mind, that didnt even have to do anything with that :ko:

sure. Eating 6 pounds of steak or chicken would probably do the same. taking a bottle of tylenol will probably kill you. Slitting your throat with a razor blade will probably kill you. All of these things are on the market. THe point is it's not the same as raw fish. You don't eat a razor blade whether it's clean or not. You can't eat 6 pounds of steak or chicken as it is, and tylenol aren't nerds candies. People are getting mad because things aren't the same as they were in the feudal ages and being a bit weary of eating raw fish, the fascist bastards.

exactly right... I think people don't want to have common sense anymore, they just want someone to blame when their stupidity hurts themselves or someone else. and lawmakers struggle frantically trying to guess what to put restrictions on to save their own asses from being blamed.

I would understand if sushi was the kind of thing one would make for their own personal enjoyment, but these are restaurants we're talking about here, where many people dine without knowing anything. A waitress can piss in my food and make it so I don't know the difference. THat is why there are laws against such things. There aren't laws that say you can't piss in the food you make for yourself.
