Are there different forms of isshu jiai (mixed weapontry fighting)? I've heard of kamajutsu (sickle) with kendo. Also heard of the sickle and chain (rope for safety) before. Anyone seen it or know if it exists?

Yes, it does.
However, the most common form of Isshu Jiai seems to be Kendo vs. Naginata. And it's a lot of fun. :D

Hopefully I'll have my first chance at an isshu jiai with a naginata soon. That shoudl be quite a bit of fun!
