when practising Kihon Keiko ho in class my sensei says after a strike i must do Zanshin when i step back and then step back again into Kamae,
but in the kata videos and some sites it says after you strike you immidiately step back into kamae then step back again (for instance here http://www.yorku.ca/kendo/Movies/Basics/1.wmv )

You're missing it - he doesn't step straight back into kamae, although the pause is shorter than we practise, the first step is disengage with zanshin, the second step back to kamae, then any futher steps in some forms are to return to the central ( starting ) position in the dojo.

I don't speak Japanese (just dojo Japanese) but I did hear the anouncer say "zanshin". I agree though It's hard to see. My advice would be to listen to your sensei. My question is, what site did you get this clip from? I'd love to see what else they have.

It's from York Uni in Canada, they have all the kihon forms, also the kata, in "modern" and also pre-war forms.
