    live octopus is not fun to eat. it's better to kill it, then boil it then use cho-jang (hot bean paste with bit of vinegar and sugar.. msg.. and some garlic and green onion) for dipping sauce.

    I try to appreciate other cultures on their own merits rather than judging from my own. Squid is delicious.



    ..........But this is plain bloody terrifying. And wriggly.
    If I'm gonna suck at Kendo, I may as well be cheerful about it

    No, it's not like squid. Squid is like a very al dente pasta in texture. Octopus is more like a blend of that with a very firm tofu-ish texture. Kind of hard to describe. And it tastes more like the sea than squid, if that's also imaginable.

    I prefer octopus prepared the greek way. Neat video, though. I can't believe the narrator calls them octopi.

    the bite on squid changes depending on how you cook it. it can be soft to hard as leather. dried squid is sort of like raw hide that dogs play with. if you do quick boil, it's soft and nice. you can have it raw and eat as sashimi or top it on rice as sushi. if you deep fry the darn thing like italians do, it gets that nice bite like al dente pasta. that's the body of the squid. the legs are just chewy. how chewy it gets depends on how you cook it.

    octopus.. the body or head of baby octopus like the way greeks eat is as soft and tender as the quick boiled squid. i don't know if i remember eating full grown octopus head/body. it's always the leg part that i ate with larger octopus. the larger octopus has legs that's about 1 inch or more in thickness. once cooked, the texture is more or less like squid, but has bit of bite to it toward the center. if cut and dried, it's not as tough as squid. way i seen it served most of the time is boiled and slince thin.

    if you are going to boil them. just make sure to boil really quickly or boil it to death. otherwise, they get nasty.

    i like them all quick boiled with spicy korean deeping sauce.

    I had an experience when ordering from a menu all written in Basque language (when visiting San Sebastian in the northern Spain) and managed to order squid served in its own ink and as an extra surprise when cutting it, they'd filled it with the arms of the squid. So at the first cut the squid just exploded and arms and additional squiddish "things" flooded the plate.....

    but all in all - a salty dish, quite ok after all.

    Wow I used to think there was no kind of sushi I wouldn't eat. I stand corrected.

    Yeah, you have to hold the lid one the pot, otherwise they jump out once the soup gets too hot.
